Ingredients:
Rotisserie Oven
5 chicken fillets, cut into slices
2 tablespoons oil
1 tablespoon chopped French tarragon
1 cup (250ml/8 fl oz.) cream
1 tablespoon lemon juice
Directions:
1. Season a bit the slices of all the chicken with some white pepper. Then heat a wok over kind of high heat, add some oil and swirl it the wok to coat the base and side with oil. When all the oil is hot, add all the chicken, in small batches, and cook it over kind of medium heat for about 3-4 minutes, or until it will be brown. Then return the chicken to the wok and stir through the tarragon.
2. Add the cream, bring to the boil and boil it for about 3 minutes or so, or until all the sauce has slightly thickened. Add the lemon juice and season it with salt and some ground black pepper. Server immediately.

Note:
1. If you are thinking to prepare this dish in advance, you should add the lemon juice after reheating to serve or the sauce will curdle. You should also avoid using Russian tarragon, which tend to have a less subtle, slightly aniseed flavour. Tarragon vinegar is a very good substitute for lemon juice.
2. Brown the chicken in small batches so that the wok does not overcrowd and lower the temperature a bit.
