I recently made these yummy chicken enchiladas for a family get together when my baby was blessed in church. They were so easy to make and I had four people request the recipe. Enjoy!
Ingredients:
Rotisserie Oven
1 rotisserie chicken
1 onion
1 8 oz package cream cheese
1 tbs + 1 c milk
¼ tsp cumin
8 oz sour cream
1 can cream of chicken soup
8 oz shredded cheddar cheese
7 burrito size flour tortillas
Spray a 9 x 13" pan with nonstick cooking spray and preheat oven to 350 degrees. Chop onions and shred chicken breast from rotisserie chicken. Warm up a little bit of olive oil and sautee onions until tender. Add chick and saute another couple of minutes.
In a separate bowl, combine softened cream cheese, 1 tbs milk, and cumin. Add to pan with onions and chicken. Fill tortillas with about 3tbs each of chicken mixture and roll up tightly. Place tortillas seam side down in baking pan.
Sauce topping:
Combine cream of chicken soup, sour cream, and 2 c milk in a bowl. Pour sauce over enchiladas and cover with aluminum foil. Bake for 35 minutes. Remove foil and add cheddar cheese. Bake an additional 5 minutes, or until cheese is melted.
These enchiladas are delicious with guacamole, tomatoes, lettuce, sour cream, olives, and salsa, and chips. You can also add spice to them by adding green chiles or jalapeno peppers in the filling and/or sauce. Now you know what to have for dinner tonight, so what are you waiting for?
