The Power of Blue Toaster Ovens

Blue toaster ovens are an essential part of the kitchen, and they are especially useful at times when you want to cook or bake foods without having to go through all the hassles of using a full-size oven. They are like a combination of a mini oven and a giant toaster. Toaster ovens are an efficient kitchen equipment that can heat and toast small breads, waffles, and can work as a small oven as well. There are those kinds that have temperature control, meaning you can set the exact temperature that you want for your particular broiling or baking needs. They also come in various colors. There are white, black, red and blue toasters to name a few.

Rotisserie Oven

Toaster ovens have settings which you can adjust to set the temperature and match that of your cooking, toasting or heating needs. They are excellent appliances because you can cook with them without having to use oil, which means a healthier meal for you. If you're someone who's always on the go, this appliance is going to be perfect for you because they can quickly heat and cook a variety of foods for you, especially if you don't have time to prepare foods yourself.

Some blue toaster ovens have broiler and rotisserie functions with their own turning turnspit, which cause them to double as a full-functioning cooking device apart from being a mere toasting, baking and defrosting appliance. Such types of toaster ovens are very spacious and have an adjustable multi-rack and fan bake system which uses a convection fan to circulate the heat within the oven. Other types are focused on the blue toaster's toasting capability, with multiple toasting slice slots that can produce browned toast, English and bagel muffins in three minutes or less.

There are many kinds of toasters available out there. Don't purchase the more expensive, multi-purpose ones if you're only planning on using it's bread toasting function. Pick the one that matches your needs best so you don't go out of budget. In terms of color, blue toasters seem to be a public favourite.

How to Cook Walleye

Whenever I hear the word "walleye," I think of Minnesota and cold northern lakes. I picture men huddled in fishing shacks, drinking peppermint schnapps while dropping lines through holes cut in the ice.

These images and others are no doubt due to my rapt listening every week to "Prairie Home Companion," but I don't think they're far off the mark. For walleye is a quintessential northern fish--in fact, it's Minnesota's official state fish. It is also found in other northern-tier states as well as throughout most of Canada.

Rotisserie Oven

A few trivia facts about walleye: The name comes from the fact that the eyes of walleyes "glow" by reflecting light, much as a cat's eyes do. Walleyes can grow up to about 15 pounds in weight and reach two-and-a-half feet in length. Walleyes are nocturnal fish, feeding at night, which is when anglers are most likely to try to catch them.

Walleye is a prize game fish, but it is also caught commercially and processed into fillets. The flesh of walleye is definitely good eating--white, firm and tasty. Some people consider it to be the best-tasting of all freshwater fish.

You can cook walleye fillets using any recipe that you would for other species of white fish. Here are two that I like.

Grilled Walleye

Ingredients

2 pounds walleye fillets

1/2 cup lemon juice

1/2 cup lime juice

1 teaspoon garlic salt

1 teaspoon lemon pepper

1 teaspoon crushed rosemary

1/4 cup melted butter

2 tablespoons horseradish

Directions

1. In a pan large enough to accommodate the fillets, mix lemon juice, lime juice and garlic salt.

2. Lay the fillets in the pan to coat one side, then turn to coat the other side. Cover pan with plastic wrap and place in refrigerator for 1 hour to marinate the fish.

3. Remove fillets from the pan and sprinkle them with lemon pepper and rosemary.

4. Cook over hot barbecue grill for 8 to 10 minutes (4 to 5 minutes per side).

5. Stir horseradish into melted butter in a bowl, then spoon this mixture over the walleye fillets and serve.

Broiled Walleye

Ingredients

2 pounds walleye fillets

2 tablespoons lemon juice

2 tablespoons lime juice

4 cloves garlic, minced

2 tablespoons olive oil

4 tablespoons dry white wine

1/4 teaspoon parsley flakes

1/4 teaspoon crushed rosemary

Directions

1. Blend lemon juice, lime juice, garlic, olive oil, wine, parsley and rosemary together until they form a kind of paste.

2. Place fish on broiler and brush with the paste. Broil fillets 20 to 30 minutes (10 to 15 minutes per side). Serve, garnishing as you wish with paprika, lemon wedges, etc.

Make-Ahead Food Ideas For Memorial Day and 4th of July BBQ Picnics

Like many folks on Memorial Day and Fourth of July weekends, you might be making plans to go camping, or planning a BBQ, or even going somewhere for a picnic.

Whatever the event, if you are the one in charge of the meal planning and cooking, if time allows, please try some of my make-ahead food ideas before, so that you can have more time to relax and to enjoy yourself and your family on the actual day of the event!

Rotisserie Oven

Just because you are the one in charge of the planning and cooking, it doesn't mean you have to be busy doing EVERYTHING food-related that day. Consider these make-ahead food ideas:

Make-Ahead Marinated Chicken and Steak

Adding steak and chicken to the hamburger and hotdog menu is easy.

The prep. time for any of my marinated steak, teriyaki chicken and Thai Chicken recipes is 15 minutes at the most. For days or weeks before, combine the marinade and meat in a freezer bag and freeze according to the recipe's directions. Remove from the freezer the day before the event and place in the refrigerator to thaw. Or prepare a day ahead, marinate and refrigerate for 24 hours. When your grill is pre-heated, you will be ready.

Make-Ahead Stuffed Beef Tenderloin

For a special, out-of the-ordinary indulgence, how does a beef tenderloin stuffed with spinach, Swiss cheese, garlic and mushrooms and slow cooked on the rotisserie grill sound? Although beef tenderloin is very expensive per pound (check out your local wholesale club for the best price) it is definitely worth a once-a-year Memorial Day event! Estimate ½ lb. per person, and a five pound tenderloin will easily feed about 10 people. My stuffed beef tenderloin recipe includes make-ahead instructions for the stuffing, allowing you to make the stuffing a day ahead.

The day you are ready for the grill, rinse the beef under cold water and pat dry with paper towels. Cut a lengthwise pocket into the side of the beef and fill with the stuffing. Tie the beef tightly with 5 or 6 separate strings to keep the pocket closed. Cut off the excess strings if they're hanging. Rub the outside of the beef with the minced garlic and season with salt and pepper. Insert a cooking thermometer in the center in the thickest part of the beef (not the stuffing.) Grill on a rotisserie (or bake in the oven at 375°F) until the thermometer registers rare in the center. Do not overcook. The ends will be more done. Let the beef rest for 15 minutes before you cut it. Remove the strings. Cut into ½ inch slices. Your guests will think you labored over extravagant cooking recipes, while you too are sitting and enjoying this delicacy.

Make-Ahead Cole Slaw and Pasta Salads

My cookbook contains some easy make-ahead cole slaw and broccoli slaw recipes. Whether its broccoli salad, Hawaiian cole slaw, or healthy broccoli slaw, it is simple to make these a day ahead. Make the dressing a day ahead and refrigerate. Assemble the other ingredients and refrigerate. To avoid a soggy cole slaw, add the dressing and toss your cole slaw right before your BBQ.

My Italian sub and macaroni pasta salad recipes can be made a day ahead and refrigerated, and these will taste delicious the day of the event.

Make-Ahead Desserts

Dessert breads are a great finger-food for a picnic or an after BBQ treat. Many of my easy dessert bread recipes like banana bread, cinnamon bread, blueberry bread or strawberry bread, allow for making ahead and freezing.

After baking two loaves of bread (many of my bread recipes will yield two loaves) wait until they are completely cooled. Next, wrap them in plastic wrap before placing them in a vacuum bag to freeze. Take them out of the vacuum sealed bags to thaw, this way the breads are already wrapped and ready for you to serve in about 4 hours.

Kids always go for the cookies, even big (adult-sized) kids! Homemade cookies are simple, make-ahead desserts that are a great finish to any picnic or BBQ.  Making Ahead is easy when you flash freeze your cookie dough.  Use the flash freezing method for my cookie recipes and you will have fantastic results.  These cookie recipes include:  big ginger cookies, brownie cookies, macadamia nut cookies, oatmeal cookies, peanut butter chocolate chip crackles, peanut butter kiss cookies, snickerdoodles, and everyone's favorite, chocolate chip cookies.  You can find these cookie recipes, as well as, all of the above mentioned recipes and my make ahead directions in my Make Ahead Meals for Busy Moms Cookbook.

The more prep. work you do in advance, the more fun you will have at your BBQ.  You want to be in the fresh air and sunshine NOT in your kitchen!

How To Barbecue An Egg

Working out how to barbecue an egg has become a bit of a family conundrum for me and this is why:-

It all started one drunken afternoon way back in the 1970's when my Uncle Harold bought a new oven for his ultra modern kitchen. Of course, me being a very young lad was completely oblivious to what went on next.

The new oven came complete with a very fashionable spit roaster and after my uncle had proudly explained everything about the appliance, more beer was consumed and the conversation turned to what type of food could be spit roasted. The obvious one was spit roasted chicken and I'm happy to say that this method of cooking chicken is as popular today as it was then, but as the drunken silliness prevailed on this occasion, the question then to be answered by my Uncle and my Father was whether it was possible to spit roast an egg.

Fortunately on that day there were only half a dozen eggs or so in the house so there could only be half a dozen or so failed attempts before the females of the house could restore a modicum of sensibility to the afternoon. The days event have been recounted on many family occasion and of course it's led me to think a little more about how you can grill an egg on the outdoor barbecue grill.

Boiling an egg is just about applying heat to the shell at a continuous temperature for a period of time so it must be possible to do the same on a charcoal BBQ grill. The problems are understanding the temperature of the grill and the fact that you can't apply the heat all over the egg at the same time. When boiling, the heat is standard at 100°C so you can approximate how long to cook it for, the only variable being the size of the egg. I've tried to grill an egg in its shell and for me, it doesn't work. After giving it plenty of time, I cracked the top only to find the white still needed more time to solidify. Having said that, I left the egg on the grill and gradually it cooked and I was able to eat and very tasty egg but to be honest it left a bit to be desired on the presentations stakes.

The best way is to mimic the frying process and cook the egg in oil. Slapping a frying pan on the grill isn't quite cricket and a ground base will take forever to warm through so I try to make it a little more fun. I make small individual foil trays that will hold one egg each, just fill the tray will a little oil and crack the egg. Heat transfers well in foil and you can see exactly when they're done so you get the perfect egg every time and the individual little trays add for the fun element.

If you're in the party mood try making your foil trays in different shapes, after all, not many people have had a triangular shaped fried egg have they and what better way to round it of than with a homemade BBQ sauce?

Your total BBQ grilling time will only be about six to ten minutes but you'll be using the pattern of paste, grill, paste, grill, paste, grill. This pattern caramelizes the meat so it won't fall off the bone premature.

Things to consider...

What things are you likely to cook? How much and how often?

The options on grills are numerous, and the price tags reflect them - but do you need them? If there are only two of you, and nobody ever comes to visit (that will change with an outdoor kitchen) do you need a huge grill? If you are going to primarily cook burgers, steaks, and pork chops do you need the expensive rotisserie? Would a pizza oven be better suited to your needs? You can get all of these, but there's no need to spend the money if you aren't going to use them. Now, having said that - don't get cheap with the grill. Pick the features you will need, and spend some money on the grill. This is, after all, the part that makes all the rest worth having. The last thing you want is to install a cheap built-in grill in a beautiful stone veneer with custom granite countertops only to have to take it out repair or replace it. So buy quality here. If you can not afford a quality built-in, consider a portable cart style.

Does the rest of your backyard design support the outdoor kitchen?

After you take the steaks and chops off of your big beautiful grill and pass them out to your highly impressed guests, do they have a place to sit? Are there covered seating areas for light rain, or for relief from the sweltering sun? Be careful to keep the seating a reasonable distance from the grill. You want to cook the T-Bone, not Uncle Joe. The effect of great outdoor cooking is lost if everyone goes back inside to eat. The rest of your outdoor living area should support and complement the kitchen. That doesn't mean you have to spend money on a covered porch or a gazebo (although both are nice) but you should at least have a patio umbrella over a table and chair set.

What other activities will be taking place while the feast is being prepared?

Cooking and eating may be the highlight of the outdoor time, but they're not the only things happening. Do your guests gather to watch the big game? If so, consider an outdoor television. Otherwise you may be the only one outside, doing the work while everybody else enjoys the Carolina Panthers beating whomever they happen to be playing. (Okay, I'm biased. So sue me.) Do your friends and family tend to just hang out chatting while the meal is being prepared? Then you'll want some music playing through a nice outdoor sound system. An outdoor refrigerator sure beats running in and out of the house for cold drinks, or lugging a cooler full of ice around. Will you be utilizing the outdoor kitchen in cooler weather? A built-in fireplace or a portable fire pit keep things cozy throughout most of the year.

How much space do you have in your backyard.

If you have a small courtyard behind your town home, you probably won't have room for a full, deluxe outdoor kitchen. If you put it in anyway, your guests will have to stand in your neighbors yard.

The idea is that you need to think about your needs, not just about what looks cool in the pictures. Buy what you need, within your budget. Speaking of budgeting - that is a real consideration. Outdoor kitchens can cost from 00 to over 0,000 depending on the options, materials, size, and how exotic you may want to be. If your budget allows you to go hog wild - have at it! If not, do what you can, as you can. Everything does not have to be done at once. Just remember to think out your long term design plan as you go step by step.

Keep in mind - while an outdoor kitchen is a great and fun addition to any backyard, it is not essential. The vast majority of backyards don't have one, and people have great times there anyway. If it fits your needs, your space, and your budget - go for it! If it doesn't fit those things, don't despair. Many, many great times and great memories have been made on a simple patio with a small charcoal grill. What matter most is spending quality time with family and friends, whatever the setting. But since you're outside anyway - you may as well make a great backyard while you're at it!
